Fall 2024 Program: Miso Classes, Recycling Bread, and Skills Exchange Community Event

We are happy to announce the dates of our fall program for QU Fermentation Studio. This season we will experiment not just with novel ferments but also with the format of our events and give more space to our ever-growing community of fermenters here in Berlin.
KIEZ-BROT-WERKSTATT: Bread Miso and Other Ferments - SATELLIT

Once again we will take part in this year’s KIEZ-BROT-WERKSTATT, a series of community bread events organized by SATELLIT. QU’s founder Polly Yim will be demonstrating how to recycle waste bread into miso and participants will taste various kinds of miso and other ferments. The event is free, public, and open to everybody.
Miso Introduction Class

Our most successful class is back on the calendar. We keep receiving requests to repeat it, so here’s your chance if you missed our previous miso-making sessions. We will meet for an afternoon together to learn the basics of making miso: preparation, maintenance, and how to harvest your miso once it’s ready.
The class will be a mixture of theory and hands-on practice. You will get to bring home the miso you made in class and learn how to age it at home and maintain long-term ferments at home.
We will also get to taste a selection of traditional and experimental misos as well as snacks made with miso. The spots are limited, so make sure to register in advance.
Community Event: Fermentation Skills Exchange

We wanted to try something new this season and involve other knowledgeable fermenters in our events. That’s why we want to organize a skills exchange event in which we will get to learn theory and practice of various fermentation practices from members of our community.
We will soon publish a form for you to submit your proposals to give a hands-on workshop, lecture, talk, or group activity related to fermentation. We will select 1-2 teachers and announce the skills exchange topics in advance, so that the speakers will have time to prepare their material.
We plan to keep the event open and accessible to our community members, but will collect donations at the event to cover the cost of the space and the materials.
We also want to remind you that soon we will host the second fermentation picnic this Sunday, as announced in the previous issue of the newsletter. See you there!
