A special brewing workshop not to miss—sharing the traditions of makgeolli, a rustic Korean homebrew.
Hello friends,
It’s been a while since I gave some updates and we thought we would share a very special project we’ve been working on with Sanghyun Cha and Eunji Park, the lovely duo behind HARU PROJECT, a young soju producer based in Germany.
Winter is the traditional time to brew rice alcohol like makgeolli: the past few months we’ve been working on some small batches for you to taste in our upcoming workshop on May 4th.
If you’ve ever been curious what makgeolli can taste like beyond those opaque plastic bottles you might have had at a Korean restaurant, this workshop is the perfect introduction to the creamy Korean rice wine that is makgeolli. From banana aromas to effervescent pineapple notes, live unpasteurized makgeolli is bold and so much more delicious than its commercial mainstream version.

What is included in the makgeolli tasting? We’ll be bringing a wide variety of makgeolli for tasting. Participants will be able to taste a full range of brews such as Yakju, Iwhaju, and Makgeolli made from different starters.
What is included in the workshop? Each participant will take home their own jar 🫙of makgeolli made together in class with a 2-stage brewing process for extra complexity. In addition to the makgeolli tasting, we’ll end the evening with a soju tasting 🌾 💦 from @haruproject.de paired with an assortment of special banchan snacks 🍽🌶🥒🥬 made by @qufermentationstudio.
